Light, acidic and mouth watering, it tastes like a dense Spanish Cava because it’s made with some of the same grape varieties but isn’t sparkling. Aroma of young lime and Cameo apple the flavor profile is tart apple skin, lemon and with good minerality. Lingering and dry finish, non-oaked. The combination of tangy sour and cold climate acid mimics sweetness for a well balanced product.

Drink with a green onion dish, probably fish… and this hoe-down is gonna go late-ish.

Resiliency: 5/10 Two glass limit.

Cannabis Pairability: 5/10 The juiciness and acidity helps to cut cottonmouth but in excess would exacerbate it. Flavor profile shows promise for pairing with an earthy and citrus strain such as the hybrid Headband.
